A square bread-hearth masonry oven built for a home baker in Eastern Ontario

The Baker

The flat hearth. For people who bake.

From $21,330 plus HST

Why this shape

A round dome is built for flame. A flat hearth is built for what comes after it — the long steady hours between 500 and 300 degrees where bread, bagels and roasting live. The fitted door and gauge let you hold a temperature instead of chasing one. It still makes an excellent pizza.

What you get

  • 42 × 42 inch interior — 1,764 square inches of cooking floor, in a 61 inch square footprint
  • Nearly twice the floor of the Gathering. Whatever you are baking, you do it in one go rather than in shifts
  • Five 10-inch pizzas at once
  • Hand-laid firebrick, 4.5 inches thick
  • 3 inches of ceramic fibre blanket
  • 1.5 inches of perlite render, then the finish — 9.5 inches of wall in total
  • Fitted cast iron door with temperature gauge
  • Stainless or black flue
  • Foundation poured below the frost line, base built
  • Delivered, installed, and fired with you the first time

What it cooks

  1. 500°Fbread & bagels

Two dozen bagels in one bake. You won't bake it better anywhere else.

  2. 300°Fslow overnight

Beans, stock, something left in overnight.

  3. 700°Froasting

Lamb, a whole fish, peppers blackening in the corner.

  4. Past 900°Fon the floor

    Pizza in ninety seconds.

  5. Still significantly hot twelve hours after the fire goes out.

What it costs

From $21,330 plus HST. Larger and smaller hearths are available — 54 inch and 78 inch square. Lead times run from a few weeks in autumn and winter to several months through the spring and summer rush. Book early if you want it for the summer. The final number is confirmed at the site visit, which is free.

Mostly pizza and gatherings? The Gathering is the round dome, and it starts lower.
